Sandy Lindow

Sandy Lindow wants people to leave their problems at the door and come into Trio Grille for a relaxing, delicious and fun time. No matter if you are a guest or a team member, for the time you are with us, focus on enjoying food and drinks here. Our staff is passionate about creating and serving you. Sandy has worked in a variety of settings as a Social Worker and has been on numerous boards. Helping those in our community is an important part of what we do at Trio with our many Donation Days, and now as the Ambassador of Fun she brings her love of meeting and listening to people to helping people plan events. "People of all ages and abilities should be made to feel welcome here! People work hard and kids have to study, so we want their time here to fun and enjoyable." Our staff works hard to make our facility a clean and family friendly place for you.


Chef Adam Ortega - Head Chef

Chef Adam Ortega has been a culinary professional for over a decade.  He is a graduate from The Cooking and Hospitality Institute of Chicago and holds a degree in Le Courdon Bleu Culinary Arts.
Early in his career he worked in various venues throughout the Chicagoland area including:  small fine dining restaurants, large volume multi-concept venues and banquet facilities utilizing American, French and Russian styles of service.
In 2010 he began concert tour catering; traveling North America providing food and hospitality for artists such as:  Luke Bryan, Shakira, Brad Paisley, Britney Spears, John Mellencamp and The Jonas Brothers. In 2011 he became the executive chef of Lollapalooza and The Dave Matthews Jamboree.  In 2013 he became the Executive Chef of Center Stage Events overseeing his touring staff and those of other tours, festivals and a growing list of contracted arenas and amphitheaters throughout the Midwest.
He has since left the road behind for the quiet life here in Marengo.  He is married, has one step-son and two small dogs.  Between his professional and personal travels he has visited forty-nine states (he can't seem to make it to Alaska) and ten countries.  Once he read twenty-five books in a month.  He enjoys hiking and reading.

Roger Bakka - Head Bartender

My name is Roger Bakka and I am the main bartender/ bar manager at Trio Grille. I've been here with Trio Grille for the last 4 years.  I was born and raised in Hampshire, IL and currently reside in Algonquin , IL.  I'm engaged to a wonderful girl and have a 4 year old daughter and 17 year old step daughter. I have worked all positions in the restaurant industry in my 18 years experience.  I really enjoy the small town feel and my passion is for providing superior customer service to all our wonderful guests. I've been known for my charming personality and making excellent cocktails with my expertise.
